Volume 6, Issue 2 ~ February 2009
I hope that everyone had a great time at our winter celebration. There was some great food served by Roseburg High School's Catering Team, and my daughter Erica. We also had some fun with PAINT bingo. Some seemed to be luckier than others. I hope they went out and bought a lottery ticket. Mary Meyers, Jean McNeese, and Belinda Legg did a wonderful job on the decorations. Everything looked just wonderful. Jeannie Swanson handed out charms to thank the officers and committee chairs that served our chapter last year. I would like to thank Jeannie for her service as the 2008 Chapter President. Let's jump head first into 2009. Chezza will be here in February. I am excited to see her again and am looking forward to the seminar. I hope that I will see you there. Please feel free to contact me with any ideas or concerns about the chapter. I want this to be a great year for every one.
Members Note: Don’t forget the February meeting is the soup potluck. The board members will be bringing soups and the members will bring sides and toppings. We will also be starting our special drawing for the treasure chest in February, if anyone wants to bring items to donate for it. The tickets will be sold for six months and will cost the same as our regular drawing tickets. Reminder to everyone that we will be deciding on our charity for 2009 at the March meeting. (Here are a couple of floating tips that I have discovered are invaluable to me. ~ Jamie)
* I always make a moist section (about 3” square) on my paper toweling prior to floating and if I feel I need a little bit more moisture in my brush, I will swipe it over this wet section of paper toweling. Usually just enough water is picked up this way; your brush doesn’t become over-saturated. * Another thing I will do is to place water drops onto my blending palette. If I need just a touch more water in my brush, I will pick it up using the water edge of the brush, re-blend my float and resume painting. |

Oatmeal Cake with Broiled Topping (Phyllis made this recently, it was so incredibly delicious! It was an American Profile recipe.)
Cake: 1 cup old-fashioned oats ½ cup (1 stick) butter, softened 1 cup granulated sugar 1 cup packed light brown sugar 2 eggs 1 teaspoon vanilla extract 1 1/3 cups all-purpose flour 1 teaspoon baking soda ½ teaspoon salt 1 teaspoon ground cinnamon
Topping: ¼ cup (1/2 stick) butter, softened ¼ cup heavy cream 1 cup packed light brown sugar 1 cup shredded sweetened coconut (chopped nuts -walnuts or pecans- optional)
Instructions 1. Preheat the oven to 350 degrees F. Grease and flour a 13 x 9-inch cake pan. 2. To prepare the cake, pour 1¼ cups boiling water over the oats in a bowl. Let stand for 20 minutes. Cream the butter, sugar, and brown sugar with a mixer. Add the oats; mix well. Add the eggs and vanilla; mix well. 3. Sift together the flour, baking soda, salt, and cinnamon. Add to the oats mixture; mix well. Pour into the prepared pan. Bake for 30 to 35 minutes, until browned. 4. Preheat the broiler. 5. To prepare the topping, combine the butter, cream, brown sugar, and coconut in a medium bowl; mix well. Spread evenly over the warm cake. Place the cake under the broiler 2 inches from the heat source. Broil until lightly browned, about 1 to 1½ minutes. Cool on a wire rack. (Serves 12 to 16)

Please remember, our chapter is very fortunate - we do not have to pay any fees to use the Tri-City Church of Christ facility. In 2009 let’s continue to show our appreciation and help support their church pantry. In the bag, please put a list of the items you bring and their est. cost, thank you!
Report: 43 food items for a total of: $59.63
